BEAN DIP FOR TORTILLA CHIPS

Ingredients

  • 3 cup well-seasoned white beans
  • 1/2 cup stemmed, peeled if desired, seeded, and minced red bell pepper
  • 1/2 cup minced onion
  • 1/2 cup peeled, cored, seeded, drained, and diced tomato (optional)
  • 1 teaspoon red wine or other vinegar

Preparation

Baking Directions:

Time: 10 minutes with precooked beans1. Place all but 1 cup of the beans in the container of a food processor or blender.

Add enough bean cooking liquid, chicken stock, sour cream, or yogurt to enable you to puree the mixture.

Lightly mash the remaining beans by hand, using a fork or potato masher; combine with the pureed beans.

Stir in the pepper, onion, tomato (if you are using it), vinegar, chili powder, salt, pepper, and hot sauce.

Taste and adjust seasoning if necessary; thin with more liquid if necessary.

Serving Directions:

You may prepare this recipe in advance; refrigerate, well wrapped or in a covered container, for up to 2 days before serving.)
