BAKED SWEET POTATO GRATIN WITH GINGER AND PINEAPPLES

Ingredients

  • 3 pound sweet potatoes
  • 1/4 pound sweet butter
  • 1 cup pineapples
  • 1/4 cup ginger
  • 1/2 cup brown sugar

Preparation

Baking Directions:

1.

Mix pineapples, ginger and sugar in a bowl, set aside.

2.

Set aside small cubes of butter in a bowl.

Butter should be cold, not melted.

3.

In gratin dish, make one layer of potato.

Add layer of pineapple mixture and add a few squares of butter.

Repeat three times.

(Expect four or so layers from this recipe.)

4.

Bake at 350 degrees, for 35 to 40 minutes, until golden brown.
