  • 4 ounce onions, julienned
  • 33/100 cup fresh shiitake mushrooms, thinly sliced
  • 33/100 pinch salt and pepper
  • 1/2 teaspoon fresh dill, finely chopped
  • 6 teaspoon eggs
  • 1 tablespoon skim milk
  • 1 teaspoon olive oil
  • 4 teaspoon spears of asparagus, grilled and cut diagonally into 2 inch pieces
  • 4 ounce monterey jack cheese
  • 4 ounce Nonstick cooking spray or butter
Yukon Gold & Sweet Potato Fries
  • 4 ounce onions, julienned
  • 33/100 cup fresh shiitake mushrooms, thinly sliced
  • 33/100 pinch salt and pepper
  • 1/2 teaspoon fresh dill, finely chopped
  • 6 teaspoon eggs
  • 1 tablespoon skim milk
  • 1 teaspoon olive oil
  • 4 teaspoon spears of asparagus, grilled and cut diagonally into 2 inch pieces
  • 4 ounce monterey jack cheese
  • 4 ounce Nonstick cooking spray or butter
  • 4 ounce yukon gold potatoes, sliced 1/4 inch thick
  • 4 ounce sweet potatoes, sliced 1/4 inch thick
  • 3 ounce onions, julienned
  • 1 ounce olive oil
  • 1 ounce Salt and pepper
  • 1 tablespoon fresh chives, finely chopped

Add onions and caramelize3. Add the mushrooms and cook until tender4. Season with salt, pepper and dill, and set aside to be used as the filling for the omelet5. In a separate bowl, beat the eggs with the skim milk                               6. Make the omelets one at a time7. Heat 1/2 teaspoon of the oil in a 6-inch nonstick skillet                   8. When the pan is hot, pour in 1/2 of the egg mixture9. When the egg is almost set; spoon 1/2 of the filling, 2 asparagus spears, and 2 ounces Monterey Jack cheese onto one side of the omelet10.
