Chef notes

This easy dessert is a winner any time of year thanks to your favorite fresh, frozen or canned fruit. Here, Bird Bakery's Elizabeth Chambers, uses frozen peaches to create a delicious peach cobbler.

Ingredients

  • 1 stick unsalted butter
  • 1 cup sugar, plus more for sprinkling
  • 1 cup self-rising flour
  • 1 cup whole milk
  • 2 cups frozen peaches, thawed or any other fresh, frozen (thawed) or canned fruit
  • 1 teaspoon almond extract (optional)

Preparation

Preheat the oven to 375°.

In an oven-proof skillet or stove-top safe baking dish, melt the butter. Adding one ingredient at a time, whisk in the sugar, then the flour, then the milk and finally, the almond extract until fully incorporated. Add the fruit to the center of the skillet or baking dish, avoiding the edges so that the edges bake into a crispy crust. Sprinkle with sugar. Bake until brown around the edges, about 35 to 45 minutes*. Serve.

Note: The cook time can vary depending on the baking dish size and material.
