Recipe: SEAFOOD HUSH PUPPIES
Ingredients
- 1/2 cup cornmeal
- 1 cup flour
- 1/2 teaspoon salt
- 1 tsp. sugar
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1 beaten egg
- 1 cup buttermilk
- 1 tsp. fresh tarragon chopped
- 2 tbs. green onion minced
- 2 cloves minced garlic
- 5 drops Tabasco
- 1/2 cup shrimp poached and chopped
- 1/2 cup bay scallops poached and chopped
- 1/2 cup lump crabmeat broken up
- 1 quart vegetable oil for deep frying
Preparation
In a 3 quart deep saucepan heat oil to 350 degrees. In a medium mixing bowl add rest of ingredients and combine to form a stiff batter. Chill 30 minutes. Using a teaspoon or 1/2 oz. scoop, drop into hot fat, cooking 4 minutes, turning once until golden brown. Drain on paper towels and serve.
