Recipe: Mahi-Mahi Fajitas

Ingredients
  • Six 4-5 oz. portions of Mahi-Mahi
  • Fajita marinate
  • Three pepper mélange
  • 12 Flour Tortillas
  • Salsa
Preparation

Prepare fajita marinate and the roasted pepper mélange and set aside. Marinate the fish for 30-45 minutes and grill over high heat until done. Brush the grill and warm the flour tortillas on the grill, a few second per side. Wrap them in a napkin to and place them on a warm plate. Serve the fish, peppers, aioli and salsa separately to allow guest to prepare the fajitas to their own taste.

Tips

All of these recipes can be prepared a day or two in advance, except the salsa. This makes for easy quick and easy preparation on the day of the event.

The peppers can be sautéed instead of roasted, however they are not nearly as flavorful or attractive. Marcel likes the natural muted colors they become after roasting.

There are many salsa recipes as well as prepared salsa’s available. Marcel suggests serving more than one. Three to five makes for a good variety.

Garnish the fish platter with slice lime, cilantro and sliced tomatoes.

Flavored tortillas are available on the market and can also be fun.
