Recipe: Roasted Garlic Mashed Potatoes
Ingredients
- 1 cup peeled garlic cloves
- 1 tablespoon extra-virgin olive oil
- Salt and pepper
- 2 pounds red bliss potatoes, cut in quarters
- 1 1/2 cups heavy cream
- 7 tablespoons unsalted butter
- Kosher salt to taste
Preparation
Preheat the oven to 325. Place the garlic cloves on a baking sheet. Sprinkle with olive oil, salt, and pepper, and cover with aluminum foil.
Roast the garlic for 1 hour. Let the garlic cool and then grind it into a paste with a food processor (or a blender or spoon).
Place the potatoes in a saucepan full of cold water and bring to a boil over high heat. Simmer until they can easily be pierced by a fork, about 20 minutes. Drain and set aside.
In another saucepan, over medium heat, melt the butter. Stir in the cream and bring the mixture to a boil. Add the potatoes and garlic paste, and mash the mixture to your desired texture. Season with salt and serve immediately.
