Recipe: PUNJABI STYLE TURKEY

  • A small (12-14 lb) Turkey
  • 2 bell peppers, sliced
  • 2 onions, sliced
  • 3 lemons, sliced
  • PUNJABI MARINADE
  • 3 TBL salt
  • 1 cup lemon juice
  • 1/2 onion, pureed
  • 4 TBL garlic, pureed
  • 3 TBL ginger, pureed
  • 1 tsp cayenne
  • 1 TBL and 1 tsp garam masala
  • 4 TBL paprika
  • 1 quart yogurt
Preparation

Puree all ingredients in cuisinart except yogurt. Fold in the yogurt well. Score the skin on the turkey all over and brush the marinade on. Fill the bird with about half of the pepper, onion, and lemon mix. Sprinkle the other half of the veggie-lemons mix on the pan and pout the turkey on top of it.

Tips

Cook as above, first fast then slow to seal in the juices.
