Recipe: Red velvet crepes

Ingredients
  • 2 eggs
  • 1 egg yolk
  • 1 cup milk
  • 1/2 cup water
  • 1/8 tsp salt
  • 3 tbsps butter, melted and extra to cook with
  • 1 tsp sugar
  • 1/4 tsp vanilla
  • 1 cup all purpose flour
  • 1 1/2 tbsp cocoa powder
  • Red food color
  • Raspberry preserves
  • Nutella, melted
  • Powdered sugar
  • for the cream cheese filling:
  • 16 ounces cream cheese, softened
  • 1/2 tsp lemon juice
  • 1 3/4 cups powdered sugar
  • 1/2 cup Ricotta cheese
  • 1 tsp vanilla extract
Preparation

Whisk eggs and egg yolk, milk, water, salt, sugar, vanilla, food color and melted butter. Add in flour and cocoa powder and whisk until smooth.

Mix all ingredients for cream cheese filling until smooth.

In a non stick pan over medium heat, melt 1 teaspoon butter. Pour cup of batter into pan and cook for about 1 minute, or golden. Flip and cook other side for about 20 seconds. Remove and place on a plate.

Spread raspberry preserve in a strip in the center of the crepe and top with cream cheese filling. Roll and drizzle Nutella over tops and dust with powdered sugar.

Recipe: Green tea mojito

Ingredients
  • 6 limes, quartered
  • 1 tbsp brown sugar
  • 2 to 3 ounces green tea-infused vodka
  • 1 to 2 cups crushed ice
  • 9 to 10 mint leaves, bruised
  • 3 to 4 ounces soda water
Preparation

Put the limes and brown sugar in a large glass and muddle together, being careful not to over do it. Add the vodka and 1 cup ice. Stir the limes and sugar to the top of the drink.

Add the mint and mix.

Add the soda water.

Fill the rest of the glass with more crushed ice. Garnish with mint.

Recipe: Heart in a basket

Ingredients
  • 2 Texas style toast bread
  • 4 eggs
  • 2 tbsps milk
  • 1 tsp cinnamon
  • Pinch of salt
  • 1/2 tbps butter
  • Powdered sugar
Preparation

In a medium bowl, whisk 2 eggs, milk, cinnamon and salt. Cut a heart shaped hole in the middle of each slice of bread. Dip bread into egg mixture.

In a griddle over medium heat, melt butter. Place bread in a griddle over medium heat and drop egg in center. Cook, covered for about 4 minutes to poach egg. Dust with powdered sugar and serve with fresh fruit.
