Recipe: Breakfast in Bed Pizza

Ingredients
  • 3/4 cup shredded Parmesan cheese
  • 3/4 cup shredded mozzarella cheese
  • 4 slices bacon, cooked and crumbled
  • 1/4 cup chopped scallions
  • 2 eggs
  • Salt and freshly ground black pepper to taste
Preparation

Preheat oven to 450 degrees.

Place mini pizza crusts on a foil lined baking sheet. Sprinkle with cheeses, bacon bits and chopped scallions. Carefully crack one egg over the middle of each pizza and season with salt and pepper.

Bake until egg is cooked to your preference, about 8-11 minutes.

Recipe: Heart in a Basket

Ingredients
  • 2 Texas style toast bread
  • 4 eggs
  • 2 tablespoons milk
  • 1 teaspoon cinnamon
  • Pinch of salt
  • 1/2 tablespoon butter
  • Powdered sugar
Preparation

In a medium bowl, whisk 2 eggs, milk, cinnamon and salt.

Cut a heart shaped hole in the middle of each slice of bread. Dip bread into egg mixture.

In a griddle over medium heat, melt butter. Place bread in a griddle over medium heat and drop egg in center. Cook covered for about 4 minutes to poach egg. Dust with powdered sugar and serve with fresh fruit.

Recipe: Red velvet crepes

Ingredients
  • 2 eggs
  • 1 egg yolk
  • 1 cup milk
  • 1/2 cup water
  • 1/8 teaspoon salt
  • 3 tablespoons butter, melted, plus extra to cook with
  • 1 teaspoon sugar
  • 1/4 teaspoon vanilla
  • 1 cup all purpose flour
  • 1 1/2 tablespoon cocoa powder
  • Red food color
  • Raspberry preserves
  • Nutella, melted
  • Powdered sugar
  • For cream cheese filling:
  • 16 ounces cream cheese, softened
  • 1/2 teaspoon lemon juice
  • 1 3/4 cups powdered sugar
  • 1/2 cup Ricotta cheese
  • 1 teaspoon vanilla extract
Preparation

Whisk eggs and egg yolk, milk, water, salt, sugar, vanilla, food color and melted butter. Add in flour and cocoa powder and whisk until smooth.

Mix all ingredients for cream cheese filling until smooth.

In a non stick pan over medium heat, melt 1 teaspoon butter. Pour 1/8 cup of batter into pan and cook for about 1 minute, or until golden. Flip and cook other side for about 20 seconds. Remove and place on a plate.

Spread raspberry preserve in a strip in the center of the crepe and top with cream cheese filling. Roll and drizzle Nutella over tops and dust with powdered sugar.

Recipe: Cheesy bacon hash browns

Ingredients
  • 1 pound shredded potatoes
  • 1 onion, chopped
  • 4 tablespoons oil
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 4 slices bacon, cooked and crumbled
Preparation

Heat oil in a skillet over medium high heat. Place potatoes and onions into skillet, season with salt and pepper and cook for 5-7 minutes until golden crispy, but do not move while cooking. Flip potatoes and cook on other side another 5-7 minutes until golden crispy. Remove from skillet, sprinkle cheeses and bacon over top.
