    >>> when you think about favorite comfort foods , grilled cheese has to be right at the top of the list.

    >> since tomorrow is national grilled cheese day, we thought hey, let's do this. matt finch is the owner and founder --

    >> american classic food for sure.

    >> so let's start with the basic grilled cheese . we'll do a fancy one in a second. if you're making this at home, how do you approach it?

    >> you guys are going to choose your bread. we've got some salted butter. whatever you guys like. your favorites. so what we do is we put the butter on both sides. because we're going to grill it on both sides. that's the key to the classic grilled cheese sandwich . it adds a lot of flavor profile to it. a texture. so after you butter it, boom, put it down. perfect, perfect.

    >> and then pick your cheese.

    >> you guys are pros. you should quit your day jobs. you can come work for me in cleveland.

    >> what cheese has the best meltability?

    >> for me, i'm going for classic american myself. but your favorites, we have pepper jack , cheddar today.

    >> you can sometimes put on too many.

    >> you can put on too many. those are about an ounce apiece, so we're going to go probably two is perfect. this is our finished product here. so you guys are making the classic grilled sandwich. down here what we have, we have a little take on the american classic . this is what we call the waking bacon. this gives you an idea of what you can do beyond the basics. at the restaurant in cleveland, we go from mild to wild. i mean, everything from lasagna, fried fish , shrimp, pulled meats.

    >> is this cheddar?

    >> yeah, we have two cheddar here. so go for it.

    >> just put it all in?

    >> there's really no rules to grilled cheese . that's the fun part.

    >> you can do this all on one griddle, it looks like.

    >> you can finish it in the oven.

    >> nice. sweet.

    >> there's a lot going on there.

    >> al, i know you're a bacon fan.

    >> boom.

    >> look at that. that's a thing of beauty. and you can't have enough bacon, can you? let's be honest. happy grilled cheese day.

Recipe: The Kindergarten

Ingredients
  • Bread of your choice
  • 4 slices of cheese of your choice (American, cheddar, pepper jack, etc.)
  • Salted butter or margarine
Preparation

Apply butter or margarine to both sides of the bread. Add the bread to the pan or griddle.  Brown the bread on the down side until the color is an even shade of medium-toasted brown. 

Flip the bread and brown the opposite side exactly the same.

Add 2 slices of cheese on each slice of bread. Join slices together and grill until fully melted, turning occasionally.

Instead of “grilling” you can also put into the oven for 3 minutes or until cheese is completely melted.

Recipe: Wake and Bacon

Ingredients
  • 2 slices bread
  • 4 slices of American cheese
  • 2 eggs
  • 5 strips cooked bacon
Preparation

Apply butter or margarine to both sides of the bread. Add the bread to the pan or griddle. Brown the bread on the down side until the color is an even shade of medium-toasted brown. 

Flip the bread and brown the opposite side exactly the same. Add 2 slices of cheese on each slice of bread. 

Cook eggs. Place cooked eggs on one bread half. Add cooked bacon to the other bread half.

Join slices together and grill until fully melted, turning occasionally.

Instead of “grilling” you can also put into the oven for 3 minutes or until cheese is completely melted
