Recipe: White chocolate grapes with orange curd

Ingredients
  • White chocolate grapes
  • 1 pound cold firm seedless grapes, stems removed
  • 4 ounces white chocolate, melted, at body temperature
  • 1 tablespoon peanut or canola oil
  • 1 to 2 tablespoons unsweetened powdered sugar
  • Orange curd
  • 4 egg yolks
  • 1/4 cup (quarter cup) sugar
  • 2 cup orange juice, (2 cups orange reduce to 1/2 cup to concentrate the flavor.)
  • 3 tablespoon unsalted butter
Preparation

White chocolate grapes

Dry the grapes well and place them in a bowl large enough to toss them easily. Line a baking sheet with a Silpat or parchment paper.

Add the white chocolate to the grapes about 1 tablespoon at a time, stirring will with a spatula, carefully scraping the sides of the bowl and folding through the center of the grapes to coat all of them evenly.

When the chocolate begins to set, using a small strainer, sprinkle the powdered sugar little by little over the surface. Gently toss or stir the grapes as you sift, continuing to add sugar until all of the grapes are well coated and separated. Spread on the prepared sheet. Cover with plastic wrap and refrigerate until the chocolate is set, or for up to one day.

Orange curd
Whisk sugar, yolks, orange juice, and butter in a small pot. Over medium heat, bring all ingredients to a boil. Remove from the heat, transfer to a bowl and cover with plastic. Place in the fridge to cool

Serve the grapes with cocktail-picks, and the orange curd on the side as a dipping sauce.

Recipe: Chocolate mousse

Ingredients
  • Chocolate mousse
  • 5 ounces semisweet chocolate, cut in small pieces
  • 1 tablespoon water
  • 4 whole eggs, separated
  • 1/4 cup plus 1 tablespoon granulated sugar
  • 6 tablespoons unsalted butter, at room temperature
Preparation

Place the chocolate in a medium microwave-safe bowl. Microwave on high at 30-second intervals, stirring in between, until melted. Allow the bowl to sit at room tempera-ture until the chocolate cools to body temperature. Test this by dabbing a small amount on your lower lip; it should not feel hot, but rather slightly warm.

Meanwhile, whisk together the water, egg yolks, and 1 tablespoon of the sugar in a medium heatproof bowl. Place the bowl over a large pan of simmering water and whisk constantly for about 5 minutes, or until the mixture has thickened and is a creamy light yellow. Remove it from the heat. The yolk mixture should be warm to the touch.

When both the chocolate and the yolk mixtures are at the correct temperature, stir the yolk mixture into the chocolate.

Using a rubber spatula, stir in half of the butter until incorpo-rated, then add the remaining butter. If it does not melt com-pletely, place the bowl over the simmering water briefly, just to finish melting the butter.

Place the egg whites in the bowl of a stand mixer fitted with the whisk attachment and beat on high for about 1 minute, until the whites are foamy. Add the remaining  1/4 cup sugar 1 table-spoon at a time and beat just until stiff, glossy peaks form; do not overbeat. Gently stir a third of the egg whites into the chocolate mixture. Then carefully fold in the remaining whites with a rubber spatula. Do not overwork; you do not want the whites to separate.

Serves 8 to 10
