    >> we start with awesome cherry tomatoes, how great are they?

    >> so great. these are great, really consistent all through the year this is going to work as our tomato sauce , we're grilling outside, the last thing you want to do is be in your kitchen.

    >> we're going to roast them a little bit. you can do them in a pan. if you want to throw the chili flakes in there.

    >> chili flake.

    >> and microplaned garlic.

    >> i don't know what you're talking about.

    >> like a cheese grater .

    >> do i add this?

    >> throw it in.

    >> the other thing you can do if you don't want to roast these, these are roasted in an oven just until they blister. you can leave it overnight and all the salt will pull out the juices of the tomato.

    >> we're grilling the dough?

    >> yes, and we're rolling this out. this is great to do with the kids, they love doing dough. you can do store-bought dough. we're going to brush the oil on with the oregano. so we're going to throw that on. this is cooking a little bit. we're going to let it flip for a second. quick tip with our mozzarella. if you're putting mozzarella on a pizza. tear it let it dry overnight in your refrigerator.

    >> to get the liquids out.

    >> flip that now?

    >> yes, do a little flipper.

    >> ready?

    >> one, two, three.

    >> look at that.

    >> mozzarella. we're going to throw this on. the great thing when you flip it you have the great heat on the other side. that allows you to melt the cheese.

    >> you can throw those on if you want. you can do the raw tomatoes on it, no problem.

    >> we're going to put a little bit of meat on here as well.

    >> how long should it quick?

    >> quick, a couple of minutes, until it starts getting melty. if this is on a grill outside. just throw the top on the grill, melt and we're good.

    >> come on back and show us more.

    >> first of all we have a cocktail.

    >> of course we do.

    >> someone told me you liked those.

    >> this is simple tomatoes pizza. any meat, whatever you want . a couple of varieties on this. bruschetta style pizza. we've taken our bread, instead of the grilling up the dough, soaked it in olive oil .

Recipe: Mozzarella and salumi pizza

Ingredients
  • For tomatoes:
  • 4 cup cherry tomatoes, cut in half
  • 1/2 cup extra-virgin olive oil
  • 2 tsp. garlic, grated on microplane
  • 1 tsp. red chili flake
  • 1 sprig rosemary
  • For the pizza:
  • 1/2 lb. good quality salumi (I like framani salame rosa, sliced very thinly)
  • 1 1/2 lb. fresh mozzarella (Removed from the liquid the evening before, torn into small pieces and placed on a towel in the refrigerator without a cover.)
  • 2 sprigs fresh oregano, picked plus one large bunch oregano tied, to be used as a brush for the olive oil
  • Grated parmesan and extra-virgin olive oil to finish
Preparation

For the tomatoes:

Combine all ingredients in a bowl and place on parchment paper in a 450 degree oven for 5 to 6 minutes, until tomatoes pop and juices start to caramelize. Remove from oven, cool and place in a bowl with all the juice on the parchment. Remove rosemary.

For the pizza:

Pizza is rolled out, brushed with extra-virgin olive oil and seasoned, placed on the grill, once it's turned, the ingredients are placed on top, allowing everything to cook into the pizza. If grilling outdoors, place on the grill shelf and allow it to melt with the grill lid down for a few minutes. (It can be placed in an oven inside if necessary.)

Finish with a drizzle of extra-virgin olive oil and grated parmesan

Makes 4 small pizzas

Recipe: Italian country bread pizza

Ingredients
  • For a ricotta pizza:
  • Ricotta
  • Chilies
  • Grilled spring onion
  • Fresh arugula
  • Extra-virgin olive oil
  • Italian country bread
  • For a chickpea pizza:
  • Italian country bread
  • 1 can chickpeas
  • 1 tsp. grated garlic
  • 2 tbsp. chopped Italian flat leaf parsley
  • 2 tbsp. chives
  • 1 tsp. freshly cracked fennel seed
  • Salt to taste
Preparation

Cut a thick (2-in) slice of good quality Italian country bread and soak in olive oil, ring out as much excess olive oil as possible without tearing the bread and place on the grill. Just like grilling pizza, once the bread is flipped, place toppings on grilled side and allow ingredients to cook.

For a ricotta pizza:

Place spoonfuls of ricotta on the bread with thinly sliced chilies, and grilled spring onion. Finish with fresh arugula and extra-virgin olive oil when it comes off the grill

For a chickpea pizza:

Rinse chickpeas from the can, removing all of the chickpea slime, add all other ingredients, place in refrigerator overnight to allow time to marinate. Before using, allow chickpeas to come to room temp. and pulse in a food processor until roughly chopped.

Spread on grilled bread, add preserved lemon and prosciutto, finish with fresh chives
