    >>> it's time to take you back in today's kitchen to check out what's cooking and today we're hitting happy hour a few minutes early with some ?@ refreshing and healthy smoothies to cool you off for the summer.

    >> we hear a few of them have a little sip of something going on to suit our tastes, so "cooking light" contributor editor allison fishman taft has a new book out called "cooking light chill."

    >> you look beautiful.

    >> sometimes people worry about these frozen drinks and smoothies because they're packed with calories. is that something we should worry about?

    >> that's exactly why we made the book. we wanted to take some of your favorites and make them lighter. i've got two here that i know you ladies are going to love.

    >> what are they?

    >> who would like a cucumber refresher and then we have a watermelon mojito.

    >> we tried that one in the opening. so let's go with the green one.

    >> and it's a healthy for us.

    >> a little cucumber. lime, fresh cucumber water.

    >> what's nice about these is everything in the book can be made with a blinder. you don't have to get a juicer if you don't have one. we're starting with an orange creamsicle. we serve it in a little orange. we've got a low-fat ice cream . we've got a sorbet. fresh orange juice , orange zest .

    >> and we have vanilla. yum.

    >> you've got a lot less. sugar and sorbet.

    >> what would you say, calorie count on that little baby be?

    >> this is going to be under 200.

    >> a little guy. what i like about it is, it could be a smoothie or you could put it in a freezer and serve it as dessert.

    >> this one looks healthy.

    >> maybe we'll like it anyway.

    >> this is the green smoothie. sometimes i hear green smoothie and i hear, i'm not going to like that.

    >> i've grown to love them.

    >> you've got spinach, honey dew and kiwi and a little bit of that honey yogurt. and then soy milk .

    >> i told you my sister was making some of these and she was adding avocado to thicken it up and it was such a great treat. delicious.

    >> if you wanted to make this one dairy free, that would be a great addition. it would do the job.

Recipe: Cucumber agua fresca

Ingredients
  • 2 tablespoons sugar
  • 3 tablespoons water
  • 1 3/4 cups peeled English cucumber slices (about 1 medium cucumber)
  • 1/4 cup water
  • 3 tablespoons fresh lime juice (about 2 large limes)
  • 1 1/2 cups crushed ice
  • 2 cups lime-flavored sparkling water, chilled
  • English cucumber ribbons (optional garnish)
Preparation

Combine sugar and 3 tablespoons water in a small microwave-safe bowl. Microwave on high for 2 minutes or until mixture boils, stirring every 1 minute. Cool.

Place cucumber slices and ¼ cup water in blender; process until smooth. Strain mixture through a cheesecloth-lined sieve into a bowl to measure 1 cup liquid; discard solids. Combine cucumber liquid and sugar syrup in a small pitcher. Cover and refrigerate 1 hour or until thoroughly chilled; stir in lime juice.

Place ¾ cup crushed ice in each of 2 glasses. Pour ½ cup cucumber mixture into each glass. Add 1 cup sparkling water to each glass. Garnish with cucumber ribbons, if desired.

Ingredients
  • 1/2 cup vanilla light soy milk
  • 1 (5.3-ounce) carton fat-free Greek yogurt with honey
  • 1 cubed peeled kiwifruit
  • 1 cup (1/2-inch) cubed honeydew melon
  • 1 cup bagged baby spinach
  • 1 cup sliced ripe banana, frozen (about 1 large)
Preparation

Place all ingredients in a blender; process until smooth.

Preparation

Place all ingredients in a blender; process until smooth.

Recipe: S'mores shake

Ingredients
  • 8 stackable marshmallows
  • 4 graham cracker sheets
  • 1/2 cup 1% low-fat milk
  • 1/2 ounce semisweet chocolate, grated
  • 3 cups fat-free vanilla light ice cream
Preparation

Preheat broiler.

Place marshmallows on a baking sheet lined with parchment paper. Broil 45 seconds or until puffed and toasted. Cool on pan 2 minutes.

Crush 4 graham cracker sheets into a blender. Add milk, 4 toasted marshmallows, chocolate and ice cream; process until smooth. Pour milk shake into 4 glasses. Top each shake with 1 marshmallow. Serve immediately.

Recipe: Watermelon mojito smash

Ingredients
  • 1/2 cup water
  • 1/4 cup sugar
  • 2 (5-inch) mint sprigs
  • 2 cups cubed seeded watermelon
  • 2 tablespoons fresh lime juice (about 2 large limes)
  • Ice cubes
  • 1 cup lime-flavored sparkling water, chilled
  • Mint sprigs (optional)
  • Lime slices (optional)
Preparation

Combine ½ cup water and sugar in a small saucepan. Bring to a boil. Cook, uncovered, 1 minute or until sugar dissolves. Remove from heat and stir in 2 (5-inch) mint sprigs. Cover and steep 15 minutes. Remove and discard mint. Cool mint syrup completely.

Place watermelon in a blender; process until smooth. Strain watermelon mixture through a sieve into a bowl; discard solids. Stir in mint syrup and lime juice.

Fill each of 2 glasses with ice cubes. Pour ¾ cup watermelon mixture and ½ cup sparkling water over ice in each glass. Garnish with additional mint sprigs and lime slices, if desired.
