In a saucepan, combine the water and sugar and bring to a boil, remove from heat and stir until all the sugar is combined and you have a simple syrup. While the syrup cools, place the mint in a pitcher or mixing bowl, and muddle with a pestle, adding the lime juice and salt. Combine the syrup and the mint-lime juice and stir well. Strain through a fine-mesh sieve into a pitcher with a lip, stir in the rum. Carefully pour about 3 ounces of liquid into each of four push pop molds. Cover with lids and freeze overnight.

Key limes are in season in the summer months, and can be found in many specialty markets. Key limes are much smaller than conventional (Persian) limes, about the size of a walnut and more acidic.
