bit because it's a very traditional cypriot dish. we're going to leave this to be juiced up and cooking here. and we have --

in the meantime. and then in the meantime we're going to make our
bechamel sauce
. i want to spend a

bechamel sauce
in the kitchen, in our kitchen, when you went to be initiated into the kitchen you had to learn how to make bechamel.

this is butter, flour and we're adding a
little
bit of milk right here. warmed up milk. so, you know, my mother always used to say you have to talk to your food.

exactly. exactly. and now here we have something very special, which is halumi cheese. it's a greek, cypriot cheese.

bit of nutmeg. we put our eggs. in here. and we stir all this up really well.

very lovely. so here. this is the first thing i learnt to make, which was very exciting.
