    >>> this morning on "today's" holiday kitchen, sweet potato latkas. hanukkah begins at sun down. nicky is a chef and she has a great potato pancake recipe.

    >> there's nothing like doing it all the at the same time. the restaurant and the baby. latkas are a tradition during hanukkah ?

    >> it's all about frying with oil. growing up it was one of my favorites. who doesn't love fried foods , right?

    >> it's global, jewish whicuisine.

    >> tell us about the sweet potato latkas. what do you do first?

    >> you can shred these with a box cutter , but the easiest thing to do is a food process for. the trick to getting a really great latka is to get all the quick lid out of there. there's so much water in the potatoes. we chopped up some onions, notice i grate them. we mix that all together. we have some egg here, a little bit of flour, this is the thing that absorbs all of that liquid. i have some baking powder. and then ancho chili which gives it a nice little kick.

    >> it gives a little spice to it.

    >> that goes with our garnish very well. and nutmeg and cinnamon. those are classic sweet potato classic.

    >> you could do this with regular flavor.

    >> at the restaurant i tried even leaving some of the skin on and getting more knew nutrients in the sweet potatoes . i always give it a little squeeze before i make my latkes. i use a ring mold.

    >> to get that perfect shape.

    >> exactly and they don't fall apart in the pan, so that's kind of great. and we have some here working hard. it's about a half an inch of oil, i use canola oil , it's just as healthy as your olive oil .

    >> and you get it going.

    >> and you kind of want them --

    >> sometimes they fall apart.

    >> that's fine, it reforms.

    >> tell us about the garnish, because like most people sour cream or like an applesauce mixture, and you actually have something different.

    >> i do this with a duck breast and a spicy vanilla applesauce. see that beautiful thing that you have? you're hired.

    >> good.

    >> we have some lime juice.

    >> and if you can always use sour kreechl.

    >> by the way, they're over here, they look fantastic.

Recipe: Sweet potato latke with lime creme fraiche

  • For lime creme fraiche
  • 2 tblsps fresh lime juice
  • 1 tspn finely grated lime zest
  • 1 bunch fresh chives, finely chopped
  • 1 cup creme fraiche
  • For latkes
  • 2 pounds sweet potatoes
  • 1 large Spanish onion, very finely chopped
  • Kosher salt
  • Pinch of ancho chili powder
  • Pinch of nutmeg
  • Pinch of cinnamon
  • 3 eggs, beaten
  • 1 tspn baking soda
  • 1/4 cup matzoh
  • 1/3 cup flour

For lime creme fraiche:

Make this by mixing all ingredients together in a bowl and placing in the fridge, allowing all the flavors to combine.

For latkes: Shred the potatoes with the fine shredding attachment of your food processor or hand grater. Place in a colander and squeeze out the excess moisture as much as possible.

Put the shredded potato in a bowl and add the onions, eggs, matzoh, flour and salt to taste. Mix in desired spices, in this case cinnamon, chili powder, nutmeg and baking soda.

In a large heavy skillet, heat 1/4 of canola oil over high heat until very hot but not smoking.  Squeeze 1/ 4 cup of batter one more time and drop into hot oil. Flatten with a spatula. Don’t put more then a few in the pan at one time. Lower the heat to medium.

Regulate the heat carefully. Fry until golden brown on one side, then turn over and fry the other side. Don’t turn more then once or they will start to get soggy.  Put finished latkes on dry paper towel.

Serve immediately with lime creme fraiche.
