Chef and TV personality Curtis Stone has a book out with this intriguing title: “Relaxed Cooking With Curtis Stone: Recipes to Put You in My Favorite Mood.” By “favorite mood” he means relaxed — and during his appearance on TODAY on Wednesday, Stone took his thoughts on relaxed cooking to a whole new level.

Making a case for food’s seductive powers, Stone shares recipes for a steamy and memorable “seduction dinner.” Here are his tips for making crab and chili tagliatelle, pomegranate martinis and chocolate and Kahlua fondue. Enjoy!

Recipe: Tagliatelle of crab and chili

Ingredients
  • 1 1/4 pounds / 20 ounces tagliatelle
  • 2 shallots, finely diced
  • 3 cloves of garlic, crushed
  • 1 fresh chili, chopped finely
  • 1/3 cup extra-virgin olive oil
  • 1/2 pound / 8 ounces picked crab meat
  • 1 cup white wine
  • 5 plum tomatoes, skinned and diced
  • 1/4 cup flat-leaf parsley, chopped
  • 1 1/2 tablespoons lemon juice (juice from 2 lemons)
  • 2 tablespoons butter
Preparation

Cook pasta in salted boiling water for approximately 1-2 minutes.

In large sauté pan, place 1 tablespoon oil over medium-high heat. Add shallots, chili and garlic and cook until soft.

Add crab for 30 seconds and then deglaze with white wine.

Strain pasta and place in another pan with 2 tablespoons butter emulsified with 1/4 cup water.

Add half chopped parsley to pasta and half to sauce.

Add diced tomato to crab sauce and add a dash of extra-virgin olive oil.

Take pasta and twist around roasting fork.

Place in bowl in an upright position, leaving a spiral.

Spoon sauce around outside of pasta and serve.

Recipe: Pomegranate martini

Ingredients
  • Ice cubes
  • 1/3 cup pomegranate juice
  • 1/4 cup vodka
  • 1 tablespoon freshly squeezed orange juice
  • Pomegranate seeds, for garnish
Preparation

Fill a cocktail shaker halfway with ice.

Add the pomegranate juice, vodka and orange juice.

Shake vigorously until the outside of the shaker becomes very cold and frosty.

Strain into a chilled martini glass.

Garnish with pomegranate seeds and serve immediately.

Recipe: Chocolate and Kahlua fondue

Ingredients
  • 2 cups heavy cream
  • 14 ounces dark chocolate, very finely chopped
  • 1 cup Kahlua
  • Assorted fresh fruit and/or desert biscotti, to serve
Preparation

Heat the cream until it is almost, but not quite simmering.

Once the cream is near a simmer, very slowly pour it into the bowl of chocolate while stirring constantly.

In a separate saucepan, heat the Kahlua to a near boil but be mindful that the liquid may flame if it becomes too hot.

Slowly add the Kahlua to the chocolate liquid and serve warm with assorted fruit and biscuits.
