Recipe: Meatballs

Ingredients
  • 2 lbs. ground beef
  • 3/4 cup Italian seasoned bread crumbs
  • 1 egg
  • 1 large onion finely chopped
  • 1 tsp. salt
  • Dash of black pepper
  • 1 tsp. garlic powder
  • 1 tsp. parsley
  • Olive oil
Preparation

Combine the ingredients and mix thoroughly. Shape into small to medium balls.

Brown in hot olive oil. Place meatballs in sauce of your choice — I use organic marinara sauce. Simmer for 30 to 45 minutes and serve over spaghetti or rice.

Recipe: Sweet-n-sour chicken

Ingredients
  • 6 drumsticks
  • 6 thighs
  • 4 skinless boneless chicken breasts
  • 16 oz. jar Russian dressing
  • 12 oz. jar apricot marmalade preserves
  • 1 package onion soup mix
Preparation

Heat oven to 350 degrees. Skin thighs and drumsticks, and then arrange the chicken in an oblong baking dish.

Mix together the Russian dressing, apricot preserves and onion soup mix. Pour over the chicken.

Cover with foil and bake covered at 350 degrees for one hour. Uncover and bake for another 30 minutes. Serve with wild rice.

Recipe: California salad

Ingredients
  • Head of Romaine lettuce
  • 1 small package of slivered almonds
  • Carrots, cut small
  • 1 small can of drained mandarin oranges
  • 1 package of Good Seasons Italian Dressing mix
Preparation

Gently toss the ingredients in Good Seasons Italian Dressing mix. Mix dressing according to the packaging on the Good Seasons box.

Recipe: Roasted vegetables

Ingredients
  • 3 sweet potatoes, peeled and sliced 1/2 inch thick
  • 3 yellow golden potatoes, peeled and sliced 1/2 inch thick
  • 3 zucchinis, cut up
  • 3 yellow squash, cut up
  • 1 eggplant, peeled and sliced
  • 2 green peppers, cut up
  • 3 onions, sliced
  • 5 carrots, cut up
  • 2 cups green beans
  • Olive oil
Preparation

Preheat oven to 450 degrees. Combine the sweet and yellow potatoes and drizzle with olive oil. Add salt, pepper, garlic powder and seasoning — like rosemary — to taste.

Line a shallow roasting pan with foil. Place potatoes in the pan and cook for 15 minutes. Add the remaining vegetables to the potatoes, add spices and drizzle with more olive oil.

Cook for an additional 15 to 20 minutes. Flip vegetables halfway through the cooking time. Remove from the oven and serve.
