Recipe: Cheddar Biscuits

Ingredients
  • 2 cups bread flour
  • 1 1/4 cups all-purpose flour
  • 1 package Rapid-Rise yeast
  • 3 tablespoons sugar
  • 1 tsp sea salt
  • 1 1/4 cups milk
  • 6 tablespoons unsalted butter
  • 2 large eggs
  • 3/4 cup grated Cheddar Cheese
  • 2 tablespoons poppy seeds
Preparation

Preheat oven to 350 degrees. Line a baking sheet with parchment paper. Set aside.
Combine the flours with the yeast, sugar, and salt in the large mixing bowl of an electric mixer fitted with the dough hook.
Combine the milk and butter in a small saucepan over medium heat. Cook for about 1 minute or until the liquid is 115 degrees on an instant-read thermometer.
Pour the liquid into the dry mixture and begin beating on low. Add 1 egg, raise the speed to medium and continue beating until the mixture is smooth and elastic.
Add the Cheddar cheese and beat until well incorporated into the dough. Pinch the dough into 1/2-inch balls and place on the prepared baking sheet, leaving room for the balls to rise.
Place the remaining egg in a small bowl and beat lightly. Using a pastry brush, lightly coat each biscuit with the egg wash. Sprinkle each ball with poppy seats.
Place the baking sheet in the preheated oven and bake for 15 minutes or until the biscuits have risen and are golden brown. Serve hot.
