Japanese soba noodles are delicious — and as an added bonus, they have fewer calories and carbs than white-flour spaghetti noodles. Chef and restaurateur Geoffrey Zakarian knows this, so he uses soba noodles in popular dishes at his New York restaurants The National and The Lambs Club.
