This simple vegetable chowder takes all the comfort of your favorite hearty soup and brightens it up—and lightens it up —with fresh flavors. Instead of cream, zucchini helps thicken the broth while still keeping things healthy. And it all comes together in one stockpot for a meal that practically makes itself.
