Seafood Hush Puppies

Ingredients

    • 1/2 cup cornmeal
    • 1 cup flour
    • 1/2 tsp. salt
    • 1 tsp. sugar
    • 1 tsp. baking powder
    • 1/2 tsp. baking soda
    • 1 beaten egg
    • 1 cup buttermilk
    • 1 tsp. fresh tarragon, chopped
    • 2 tbsp. green onion, minced
    • 2 cloves garlic, minced
    • 5 drops Tabasco
    • 1/2 cup shrimp, poached and chopped
    • 1/2 cup bay scallops, poached and chopped
    • 1/2 cup lump crabmeat, broken up
    • 1 qt. vegetable oil for deep frying

Preparation

Baking Directions:

In a 3-quart deep saucepan, heat oil to 350 degrees. In a medium mixing bowl, add rest of ingredients and combine to form a stiff batter. Chill 30 minutes. Using a teaspoon or 1/2 oz. scoop, drop into hot fat, cooking 4 minutes, turning once until golden brown. Drain on paper towels and serve.
