At one San Francisco charcuterie shop, happy hour has taken on a porky twist.

Every Wednesday morning, reports NBC Bay Area, a whole hog is delivered to the Fatted Calf -- and butchered ceremonially at 5:30 p.m. while onlookers drink beer and munch on chorizo.

Writes NBC:

Developed to educate people about how meat is carved, Fatted Calf encourages picture-taking, question-asking, and generally making a nuisance of yourself as you watch and eat.

The store, which sells specialty foie gras, salumi and sausages, also offers butchering classes for customers who want to get more hands-on about things. But if you'd rather just watch it all happen, rather then dig the knife in yourself, then this sort of demo-turned-party could be for you, especially if meat, for you, is therapeutic.
