But this homemade version from Cooking Light, which gets crunch from heart-healthy almonds, is not only good for you — it's quick to make. The recipe calls for cooked chicken, so if you made extra chicken earlier this week, you're good to go. If not, pick up some rotisserie chicken or cooked, sliced chicken breasts from your grocery store. Then all that's left to do is whisk together a gingery dressing and toss it with the chicken, greens, carrots and snow peas, then sprinkle with almonds and serve!
