Add apples to your family meal: Herb crusted baked pork chops, apple sauce

Granny smith applesauce
Makes 4 servings

  • 4 granny smith apples
  • 1 cup brown sugar
  • 1 cinnamon stick

1. Peel and core 4 apples then coarsely chop 

2. Place apples in sauce pot with 1 cup light brown sugar and 1 cinnamon stick.

3. Slowly cook till apples are completely cooked and start to mash with a potato masher or use an immersion blender.

4. Cook till desired consistency, cool and reserve.

Breaded herb crusted baked pork chops
Makes 4 servings

Pork chops

  • Boneless pork loin chop-cut 1 1/4" thick (2 chops per serving)
  • Non-stick spray

1. Preheat oven to 375 degrees.

2. Cut boneless pork loin chops 1 1/4" thick each.

3. Spray chops with non-stick spray. No need for any butter or flour.

4. Coat with breadcrumbs (method below). 

5. Bake for 35 minutes.

6. Serve with applesauce.

Herbed breadcrumbs

  • 2 cups flavored store bought Italian seasoning breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1/4 cup chopped parsley, cilantro & dill combined
  • 1 tablespoon fresh lemon zest 
  • 1 tablespoon Spanish paprika

1. Mix all ingredients together in a mixing below, reserve and then use in step 4 (above).

Quick apple crisp
Makes 4 servings

  • 6 Granny Smith apples
  • Pinch of brown sugar 
  • 1/2 teaspoon of vanilla extract 
  • Juice of one lemon
  • Carton vanilla ice cream

1. Preheat oven to 350 degrees.

2. Peel and core 6 granny smith apples, then slice into wedges.

3. Cook apples in a sauté pan with light brown sugar, 1/2 teaspoon of vanilla extract & juice of one lemon.

4. Do not overcook. Cook just until apples and sugar have become syrupy.

5. Place mixture in a buttered/greased large baking dish. 

6. Top with dutch crumble mixture (see method below).

Dutch crumble mixture

  • 1/2 cup brown sugar
  • 2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 teaspoon cinnamon
  • 1/2 teaspoon of salt
  • 2 sticks of cubed butter

1. In a food processor, pulse 1/2 cups light brown sugar, 2 cups all-purpose flour, 1 cup rolled oats, 1 teaspoon cinnamon, 1/2 teaspoon of salt. Pulse till fully combined.

2. After dry ingredients are mixed, pulse in 2 sticks of cubed unsalted butter

3. After fully mixed, place mixture atop of apple mixture and bake for 30 to 40 min or until golden brown and bubbling. You may need to cover with foil for last 15 min so it doesn't burn.

4. Serve all with vanilla ice cream, whipped cream or both!
