The United Nations has declared 2013 "the international year of the quinoa." Now eat up delicious dishes like this 'Real Food' bowl with quinoa and kale.

It may be the year of the snake in China, but the United Nations is calling 2013 “the international year of the quinoa,” thanks to a proposal from the Bolivian government. Meant to encourage the ancient grain’s growth in food-scarce countries, they hope the designation will “focus world attention on the role that quinoa’s biodiversity and nutritional value plays in providing food security and nutrition.”

Americans (and health-minded foodies!) have been embracing the high-in-protein "super grain" for quite some time — it’s even started popping up in more mainstream restaurants like the California Pizza Kitchen. Whether you prefer quinoa at breakfast, lunch or dinner, we've rounded up a hand full of delectable recipes featuring the nutty, nutrient-rich food.
